About the Role

The Third Commis Chef is responsible for executing tasks assigned by the supervisor to ensure the preparation and availability of daily food products as per menu specifications and operational standards. The role supports senior chefs in maintaining hygiene standards, documentation, and proper mise-en-place preparation while ensuring cleanliness across workstations, storage, and refrigeration areas.

Key Responsibilities

• Prepare food efficiently and in accordance with approved recipes and standards.
• Collect task briefings and operational instructions from the Manager on Duty at the beginning of each shift.
• Assist the Section Chef in completing assigned kitchen tasks.
• Prepare and organize mise-en-place and ingredients before cooking begins.
• Ensure mise-en-place complies with standard recipe specifications.
• Support hygiene, grooming, and food safety compliance across the section.
• Follow FIFO (First In, First Out) procedures for raw and processed food handling.
• Cut and prepare vegetables and raw materials for hot kitchen operations.
• Assist in preparation of red meats, poultry, and seafood as required.
• Monitor raw material usage throughout the shift and report shortages.
• Maintain cleanliness in work areas, storage, and refrigeration units.
• Perform additional department-related duties as directed by the Head of Department.

Qualifications

Education & Experience

• High school qualification.
• Up to 2 years of relevant experience in a kitchen or food production environment.

• Basic food hygiene knowledge.
• Understanding of food safety standards.
• Basic cooking techniques.
• Ability to read and write effectively.
• Basic literacy and numeracy skills.
• English communication skills.
